So, a goal kick is taken by gk and played to a centre back on the side of the penalty box.
Is the opposing striker allowed to run through the box to get to the centre back (so, striker in the box whilst ball is rolling but does NOT play at the ball or touch the ball)?

Yes the opposing player can run towards the ball as long as he is back the required distance when the GK kicks the ball to start play. No player can touch the ball until it leaves the penalty area. Any player can contest once the ball travels outside of the penalty area. If the ball is touched by any player inside the penalty area the GK has to be re-taken. This also applies for a free kick to the defending team in the penalty area.

No, attacking players are not allowed inside the penalty area until the ball is in play i.e. has left the penalty area.

Back to square one.... any other thoughts. (Yes, I have looked up the Laws of the Game and can find nothing to prevent running through the box after kick has been taken).

Page 51A goal kick is a method of restarting play. A goal kick is awarded when the whole of the ball passes over the goal line, either on the ground or in the air, having last touched a player of the attacking team, and a goal is not scored in accordance with Law 10. A goal may be scored directly from a goal kick, but only against the opposing team. Procedure• The ball is kicked from any point within the goal area by a player of the defending team • Opponents remain outside the penalty area until the ball is in play• The kicker must not play the ball again until it has touched another player • The ball is in play when it is kicked directly out of the penalty area

So, a goal kick is taken and played towards an outfield player standing at the side of a penalty area. If that player is being closed down prior to the ball being in play (outside the penalty area), the smart thing to do by the recieving player might be to step inside the penalty area , stop the ball, and force the kick to be retaken rather that take the pressing player on in a dangerous position.
